I think this one came from Epicurious, but not sure.

4 pounds cauliflower flowerets
1 large onion, peeled and quartered
1 teaspoon ground coriander
1 teaspoon cumin
3/4 cup olive oil
1/2 cup red wine vinegar
3 1/2 teaspoons curry powder
1 tablespoon paprika
1 3/4 teaspoons salt

Preheat oven to 450°F.

Put cauliflower and onion in a large zip bag (or bowl). Combine oil, vinegar and seasonings in a small bowl. Pour into bag (or over veggies) and mix well. Pour out into a baking dish.

Roast vegetables until tender, stirring occasionally, about 35 minutes.
