4 cans beans, rinsed and drained (we use black beans, great northern, light red kidney and dark red kidney)
1 can corn, drained
2 packages Taco Seasoning Mix (or 2 TBSP homemade taco seasoning)
2 cans diced tomatoes (I like the Muir Glen Fire Roasted tomatoes)
1 onion, chopped
2 or 3 chicken breasts

Place all ingredients except chicken in crock pot and mix. Place chicken breasts on top. Cook on low for 8 hours or so. 30 minutes before you want to eat, shred the chicken and stir back into the chili.

This is also good with ground beef or turkey instead of the chicken. Just brown the meat before hand and mix in with the other ingredients in the beginning.

The BEST version we had of this I use ground beef instead of the chicken and I also added some leftover cubed ham. Yum. So, basically, the meat is subjective 🙂
